Start with clean equipment and fresh vegetables

Cleanliness matters, but fermentation does not require a sterile kitchen.

Wash your hands, jars, crocks, weights, knives, boards, and other tools with hot soapy water. Rinse them well and allow them to dry.

Use fresh vegetables without rot, mould, or badly damaged areas. Remove any spoiled parts before you begin.

The goal is simple: reduce unwanted contamination while keeping the natural microorganisms already present on healthy vegetables.

Use the right amount of salt

Salt helps create the conditions that allow helpful lactic acid bacteria to grow while slowing many unwanted microorganisms.

Too little salt can make fermentation less stable. Too much can slow the process and make the vegetables unpleasant to eat.

Keep the vegetables beneath the brine

Vegetables exposed above the brine are more likely to develop mould or other unwanted growth.

Use a fermentation weight, cabbage leaf, small plate, or another clean method to keep the vegetables submerged.

Check the jar during fermentation. If pieces rise above the brine, gently press them back down with a clean utensil.

Use a suitable container

Use a clean, food-safe container such as a glass jar, ceramic fermentation crock, or food-grade plastic vessel.

Do not taste a batch that appears spoiled.

When in doubt, throw it out and begin again with clean equipment and fresh ingredients.

Trust your senses, but use clear rules

Your eyes, nose, and taste can tell you a great deal about a ferment.

Over time, you will learn what normal sour aromas, cloudy brine, bubbles, and changing textures look like.

Beginner questions

Do I need to sterilize everything?

No. A home fermentation kitchen needs to be clean, but it does not need to be sterile.

Wash your hands, tools, jars, crocks, and weights with hot soapy water. Rinse them well and let them dry.

Is cloudy brine unsafe?

Not usually.

Cloudy brine is common during active fermentation and often appears as microorganisms multiply and small particles move through the liquid.

Can I remove mould and keep the rest?

No.

If fuzzy mould appears, discard the whole batch. Removing only the visible mould does not guarantee that the rest is safe.

Clean the container and tools well before starting again with fresh vegetables.

What if the vegetables rise above the brine?

Gently press them back beneath the brine with a clean utensil.

If this happens often, add a clean fermentation weight or another suitable method to help keep the vegetables submerged.

A few floating pieces are easier to correct early than after they have stayed exposed to air for a long time.

What if I am unsure whether a batch is safe?

Do not taste it.

If the batch has unusual growth, a rotten smell, strange colours, or anything that makes you seriously question its safety, discard it.

It is better to lose one batch than take an unnecessary risk. Clean your equipment, review the method, and begin again.
