This crisp and refreshing Thai coleslaw recipe is full of nutritious vegetables and a delicious Thai salad dressing that adds an unexpected punch to this side dish. - ½ small head green cabbage
- ½ small head purple cabbage
- 2 carrots
- 1 red pepper
- 1 yellow pepper
- 1 medium red onion
- 1 bunch cilantro
- 1 small chicory head
Thai Coleslaw dressing ingredients:
- 2 Tbsp chopped ginger
- 2 garlic cloves, minced
- ¼ cup lime juice
- 2 Tbsp soy sauce
- 2 Tbsp honey
- 1 tsp red curry paste
- 1 Tbsp sesame oil
- ½ cup peanut oil
- 1/4 tsp salt
Method:
To make this Thai coleslaw, you’ll need one bowl for the shredded vegetables, one bowl for the dressing, and your Cabbage Shredder – that’s it!
