Bubbles, cloudy brine, sour aromas, and changing colours can all be part of a healthy ferment. Other signs, such as fuzzy mould, rotten smells, or unusual growth, need more caution.

Bubbles are usually a good sign
Bubbles form as helpful bacteria use the natural sugars in the vegetables and release gases.
You may see bubbles moving through the brine, collecting around the vegetables, or rising when you press the ferment down.
Some batches produce many bubbles. Others ferment more quietly. The absence of visible bubbles does not always mean the process has stopped.
Cloudy brine is often normal
Cloudy brine is common during active fermentation.
It can happen as microorganisms multiply and tiny particles move through the liquid. In many cases, it is simply a sign that the ferment is developing.
Look at the whole batch. Cloudy brine on its own is usually not a problem when the vegetables smell pleasantly sour and remain beneath the brine.

They may become softer more quickly when the room is warm, the vegetables were not very fresh, the salt level was too low, or the fermentation continued for a long time.
Soft vegetables are not always unsafe, but texture can tell you something about how the ferment developed.
White film on the surface
A thin, flat white film can sometimes form on the surface of a ferment. This is often called kahm yeast.
It is different from fuzzy mould. Kahm yeast usually looks smooth or wrinkled and stays flat across the surface.
It is not usually dangerous, but it can affect the smell and flavour. Remove it carefully, check that the vegetables are beneath the brine, and improve protection from air.
If you are unsure whether the growth is kahm yeast or mould, discard the batch.
Fuzzy mould means the batch must be discarded
Fuzzy growth is mould.
It may appear white, green, blue, black, pink, or orange and often looks raised or hairy.
Do not scrape it off and keep the rest. Discard the whole batch, then clean the container and tools well before starting again.
Unusual colours need attention
Some colour changes are normal as vegetables ferment. Red cabbage may deepen in colour, and green vegetables may become duller.
However, pink, orange, black, or other unusual growth on the surface can be a sign of spoilage.
Look at the whole batch, including the smell, texture, and surface appearance. If the colour change looks like growth rather than a natural change in the vegetable, discard the batch.
