This crisp and refreshing Thai coleslaw recipe is full of nutritious vegetables and a delicious Thai salad dressing that adds an unexpected punch to this side dish. Consider adding protein like grilled chicken, shrimp, or pork with a sprinkle of crushed peanuts and make a complete meal.

Thai Salad ingredients:

  • ½ small head green cabbage
  • ½ small head purple cabbage
  • 2 carrots
  • 1 red pepper
  • 1 yellow pepper
  • 1 medium red onion
  • 1 bunch cilantro
  • 1 small chicory head

Thai Coleslaw dressing ingredients:

  • 2 Tbsp chopped ginger
  • 2 garlic cloves, minced
  • ¼ cup lime juice
  • 2 Tbsp soy sauce
  • 2 Tbsp honey
  • 1 tsp red curry paste
  • 1 Tbsp sesame oil
  • ½ cup peanut oil
  • 1/4 tsp salt

Method:

To make this Thai coleslaw, you’ll need one bowl for the shredded vegetables, one bowl for the dressing, and your Cabbage Shredder – that’s it! In this recipe we use a Professional Cabbage Shredder for the green and purple cabbage, and the Compact Cabbage Shredder for the carrot, peppers, onion, and chicory head. As always, don’t forget to wear your protective glove as the blades on all Cabbage Shredder products are incredibly sharp. Simply shred your vegetables and toss them together in one bowl, and after combining the ingredients to the Thai coleslaw dressing combine it all and toss once more.
