This is a perfect end-of-summer quick and easy coleslaw recipe that you can whip up in 10-15 minutes with your cabbage shredder and only a few tasty ingredients. With the tang of lemon zest, freshness of dill weed and nuttiness of poppy seeds to flavour the dressing and slaw, this coleslaw recipe is the perfect salad to pair with ribs, chicken or a poached or baked fish dish, if you don’t have access to a barbecue.

With green and purple cabbage, red and yellow peppers, red onion and chives this creamy coleslaw with poppy seed dressing is a colour and attractive addition to any plate. It’s a perfect lunch accompaniment to sandwiches or a quick and delicious snack if you’re looking for a bit of energy to keep you going for a couple more hours. Consider adding some raw pumpkin or sunflower seeds for an added bit of protein and extra crunch.

Coleslaw Salad Ingredients:

  • ½ small head green cabbage
  • ½ small head purple cabbage
  • 2 carrots
  • 1 red pepper
  • 1 yellow pepper
  • 1 medium red onion
  • ¼ cup finely chopped chives

Creamy Dill and Poppy Seed Dressing

  • ½ cup mayonnaise
  • ½ cup yoghurt
  • 2 tbsp Dijon mustard
  • 3 tbsp apple cider vinegar
  • ½ tsp lemon zest
  • 1 tbsp honey
  • ¼ cup chopped dill
  • 1 tbsp poppy seeds

Method


To make this delicious creamy poppy seed slaw you’ll need one bowl for the shredded vegetables, one bowl for the dressing, and your cabbage shredder – that’s it! In this recipe we use a Professional Cabbage Shredder for the green and purple cabbage, and the Compact Cabbage Shredder for the carrot, peppers, onion, and peppers. As always, don’t forget to wear your protective, cut resistant glove as the blades on all of our shredder products are incredibly sharp.
Simply shred your vegetables and toss them together in one bowl, and after combining the ingredients to the creamy dill and poppy seed dressing combine it all and toss once more.
